Mmmmmm


For V-Day, Brandon and I have an understanding that NO GIFTS are expected and are, in fact, frowned upon. Instead, we prepared this gourmet meal together and savored EVERY LAST BITE. It was mmm mm mmmmm good. I thought I'd share the recipe since your mouth is probably watering right now after seeing my awesome food photography skills.

First, cut baguette into 1/2 inch slices and toast on grill or in oven for a few minutes. Cut a garlic clove in half and rub one side of each toast slice with garlic. Brush with olive oil. Top toast slices with the following mixtures (separately).


Tuscan White-Bean Bruschetta

1 can white kidney beans rinsed and drained

1 T fresh lemon juice

1 tsp. minced fresh sage

1/4 tsp. salt

1/4 tsp black pepper

1 T olive oil

3 tsp. minced fresh parsley


Lightly mash beans with all ingredients and save some parsley for garnish.


Goat Cheese + Tomato Bruschetta (this was our fave)

1 package (5.5 oz) soft mild goat cheese

1 tsp minced fresh oregano

1/4 tsp black pepper


Mix first three ingredients together in small bowl.


2 ripe tomatoes, seeded, chopped.

1/8 tsp salt

1 T olive oil

2 tsp minced fresh parsley


Mix last four ingredients together.
Spread cheese mixture on to garlic-rubbed side of toast and top with tomato mixture. Garnish with remaining parsley.
